Nearly all of it. A banana tree is not a tree at all, but a large herbaceous plant. And the banana itself, while certainly a seeded fruit, can also be classified as an herb, particularly if the bananas are sterile.
In southeast Asia, the inner portion of the rolled up layers of the “trunk” (leaves) are considered a delicate salad vegetable, and the tender core of the stem is highly prized. The outer part of the leaves are also of course used to steam meats and vegetables in.
The peel is edible also, but probably not as is — it’s fibrous and bitter. But you can fry, bake, or boil the peel to make it palatable.
The banana itself is what we eat most often, and it has a great many health benefits, but nearly the entire plant is edible.
