Because every axis starts from 0 whether in positive or negative direction if its a one dimesion then origin will be zero of it is two dimension then origin will be 0,0 and if its three dimension the origin will be 0,0,0 its a matter of assumption, you can also assume 1,1 as origin and state but the problem is that all other people in this world knew that 0,0 is the origin point so it is convinient to use 0,0 as origin as it is internationally acceptable and known. The three axis x , y and z are set of real numbers and real numbers include zero. Its a common sence that everthing starts from zero.
