Both aldehydes and ketones react with HCN to form addition product Cynohydrin (in presence of a base). HCN + OH ... But acetophenone does not react with NaHSO3 due to stearic..

Benzophenone does not form additional product with sodium bisulphite because of its stearic properties. The main reason behind the property of no change is, that the benzene ring is included in the process. Due to which, there was no additional product is being formed after the experiment is done. You can always try and check the properties for the chemicals, in your chemistry laboratory.
