Because when magma cools, crystals form because the solution is super-saturated with respect to some minerals. If the magma cools quickly, the crystals do not have much time toform, so they are very small. If the magma cools slowly, then the crystalshave enough time to grow and becomelarge.

We know that a saturated solution contains good amount of solute and solvent molecules.
When we cool down a saturated solution.
The solute molecules break the bonding with the solvent molecules and all the solute molecules get seperated.And as a final result big solid crystals are formed.
This phenomenon is also used in the industries to produce solid crystals of different necessary substances.
