Water is used because it is a universal and fundamental substance to the field of chemistry as we know it on planet Earth. Water is so fundamental that the unit of heat in calorimetry, the calorie, is defined as the amount of energy required to raise the temperature of 1 gram of water by 1 degree Celsius. (Alterntely, the dietary Calorie replaces the 1 gram of water with 1 kilogram, and is equivalent to 1000 “small calories”)
