The Answer -

John enters the bar and asks for water because he had hiccups which he wanted to cure.

The bartender didn't gave him water but shooted on the ceiling to surprise him and help him to cure his hiccups.

As his hiccups were cured he said Thank you.

Therefore john needed water to cure his hiccups.

I know the answer is hiccup but lets just think out of the box in a different way

May be John and the bartender are undercover agents. Like they are having a Secret code where john asks for water but actually asking (where the culprit is) and bartender answers him by shooting up on the ceiling answering that 'may be he went out'in code word so other people cant get them. And then John leaves with thank u as he now know where he is without having water.

I know that mustn't be the right answer but always think with some other angle
