It is because of the chemical change.
When we cut apple, it becomes brown because of the chemical reaction between oxygen and apple.
While oxygen is available in cells, then the PPO (polyphenol oxidase) enzymes in chloroplasts quickly oxidize the phenolic compounds which are available in apple issues to the o-quinones.
They are the colorless precursors to the brown-colored secondary products.
