The amount and time of secretion of hormones are controlled are controlled by the inbuilt feedback mechanism in our body.
For example,
The cells of the pancreas detect the amount of blood sugar levels. If they are high then it starts producing more insulin into the blood and if there is low sugar content in the blood then it stops producing insulin into the blood until the blood sugar level become normal and get regulated.
