We, as human beings, do not have the bacteria and neither the enzyme needed to digest cellulose in food. So, it is excreted as fibres.

Due to so, the cellulose which enters our digestive system cannot be turned into its constituents, unlike starch, which we can turn into its constituents (glucose) by our amylase enzyme. Since we cannot digest the cellulose, the undigested cellulose is later called fiber.

With the presence of fiber, our body constantly tries to get rid of it through feces. This is why fiber can improve the health of our digestive system.

Animals can digest cellulose.
