In most ammeters and voltmeters or multimeters, the red colored probe is the positive terminal and black colored probe is the negative terminal.

In the case of the ammeter below (A), if current flows through the ammeter from red terminal to black terminal then the current will appear as a positive reading. If the current is in the opposite direction then the ammeter will display a negative reading.

Similarly in the case of the voltmeter (V). If the red probe is touching a node at a higher potential than the node touching the black probe, then the voltmeter will read a positive number and will read a negative number if the potentials are other way round.
