Sulphuric acid is an strong dehydrating agent so it removes water from a substance with which it reacts. When  sulphuric acid is added to carbohydrates and sugar, it removes hydrogen and oxygen from them and  leave behind carbon which looks like burnt sugar that is brown in colour.
