Triglycerides[edit] Neutral fats (triglycerides) are composed of fatty acid hydrocarbon chains bonded to a single glycerol molecule. Fatty acids consist of long hydrocarbon chains with a carboxyl group while glycerol consists of 3 carbons and 3 hydroxyl groups.
