COMPOSITION OF MILK:

Milk is a complex fluid which contains more than hundred components. Most of these components are suspended in water and thus milk is a colloidal solution and has opaque consistency. The major components of milk are water, protein, fat, carbohydrates, vitamins and minerals. All the solids in milk are referred to as ‘total solids’ and the total solids without fat are known as milk solids-not-fat (SNF). The composition of milk varies with the species, breed, feed, lactation period and interval between milking.
