Baking powder is a mixture of baking soda NaHCO3 (sodium hydrogen carbonate) and a mild edible acid such as tartaric acid. When baking powder is mixed with water, sodium hydrogen carbonate reacts with tartaric acid and accepts hydrogen ions from it.
