Curd sets 4-5 hours in summer but take much longer in winter. why?

To make a curd,fermentation is must.The hotter the temperature,the faster the fermentation.Because the yeast tends to multiply in 70-50F.So only we store batter in fridge to make the bacteria not to multiply anymore.
