Curd sets in 4 - 5 hours in the summer season but takes a longer time in the winter season. The bacteria like lactobacilli and streptococci are responsible for turning milk into curd. In summer the temperature is hot which helps the bacteria to multiply faster and change the milk into curd. In winter the temperature is not warm and favourable for such growth. So it takes more time to set the curd.
