Because sharp knife has less area which applies more pressure on the vegetable which is to be cut.....

Cutting vegetables with blunt knife is difficult just because the area of contact between the vegetable and the knife edge will be more .
But if the knife has a sharp edge the area of contact between the vegetable and the knife edge will be less then it is easy to cut.
