Mughal Empire was was ruled by a single dynasty whereas the Delhi Sultanate was ruled by different rulers at different times. It was Babur, the first mughal ruler, who defeated the last Sultan of Lodi Dynasty, Ibrahim Lodi, in the First Battle of Panipat, brought down the Delhi Sultanate and founded the Mughal Empire.
