Evaporation is the change of liquid state of into vapour state at any temperature. It causes cooling because it is a surface phenomena. During evaporation the latent heat of vapourisation is taken by liquid from the surface to break it's intermolecular force of attraction. thus the surface lose heat and it causes cooling. It is evaporation due to which we could dry our clothes in any weather, the lands become cool when we pour water on it , the water of earthen pot remains cool and thus there are many examples of evaporation in our daily life.
