It carries nerve signals from the eye to the brain, where the signals are interpreted as sight. Imagine a cable connecting a camera to a screen, where the camera takes the images but you must look at the screen to see them.
Cut an optic nerve, and you lose sight in that eye. The camera and screen work fine, but the images are not going between them.
