coolant absorbs the heat from the engine by passing through it. This cools the engine. This now hot coolant goes through the radiator to trasfer the heat to the radiator and back to the air. The coolant is now cool again and goes back into the engine to absorb more heat.

You can use pure water to do this, the only benefit of ethelyne glycol is that it lowers the freezing point and boiling point of the coolant compated to water, so it can be used in a wide variety of climates.
