Our teas go on an incredible journey before they find their way to your teacup, and the story of how tea is produced is one worth sharing. Let’s travel back in time to when your tea was just a Camellia sinensis seedling being planted in the ground, and we will see what happens from there.

The seedling spends its early months in a nursery, carefully tended to. Once the plant is strong enough, it is transferred to a hillside where it continues to grow, sheltered by the shade of trees. After about three years, the tea plant is ready for its first harvest. This is when things really start happening, and we can describe the process in the following five steps:

1.) Plucking – The tender tea leaves are plucked by hand to ensure optimal quality. A first harvest occurs in early spring called first flush, followed by a second harvest in late summer and a third autumnal flush.

2.) Withering – Once the leaves are plucked, they are taken to a moisture- and temperature-controlled factory. They have already begun to wilt, moving along toward oxidation. Withering is an essential part of the tea production process because it removes unwanted water from the leaves

3.) Rolling – Rolling is the next step in the process. The leaves are rolled and shaped by hand, causing the tea to develop flavor as it is rolled into shape and the juices are released.

4.) Oxidation – The oxidation process is what determines the type of tea you will produce – white tea, green tea, oolong tea, or black tea. It is also when much of the tea’s taste and aroma is established. Green tea and White tea not allowed to oxidize at all, which is how it comes by its distinctive grassy and vegetal flavor. Oolong is slightly more oxidized and black tea is oxidized most of all.

5.) Drying – The final stage in the production process is conducted with great care; drying the leaves by gently heating them halts the oxidation stage and seals in flavor. The tea is now ready to be packed and shipped directly to your teapot.
