INSTRUCTIONS

firstly, heat 2 tbsp ghee / clarified butter and roast 10 cashews, 1 tbsp raisins on low flame.

once the cashews turn golden brown, keep aside.

now in the same ghee roast ½ cup bombay rava. use fine / coarse variety rava.

roast on low flame for 5 minutes or till it turns aromatic. keep aside.

in a large kadai boil 1 cup water.

keeping the flame on low, add in ½ cup roasted bombay rava.

stir continuously till the rava absorbs water and no lumps are formed.

further add ¾ cup sugar (add ½-1 cup depending on sweetness you prefer).

keeping the flame on low, stir well till the sugar dissolves.

furthermore add 2 tbsp saffron water or kesari food colour. (soak few treads of saffron in 2 tbsp of warm water for 15 minutes)

also and ¼ cup ghee and stir continuously.

make sure the mixture is combined well and no lumps are present.

cover and simmer for 2 minutes or till rava gets cooked well completely.

additionally add roasted cashews, raisins and ¼ tsp cardamom power.

mix well till the rava kesari separates from pan.

finally, serve rava kesari / kesari bath as a dessert

Rava kesari recipe is one which everyone in our family loves! nd it is so easy to make..as we make this as one important sweet during our family member’s birthday!

so here is the recipe! try to follow the same and it will come out really well! i will also leave a link to my video where you can visually understand!..

INGREDIENTS:

Rava- 1 cup

Sugar- 2 cup

Ghee- 4 TBSP

water- 3 cups

Orange food colour

Cardamom powder

Cashews

procedure:

first dry roast the rava and keep it aside.now add 3 cup water and bring it to boil in this video i will be adding orange rava kesari food colour! it is up to you to add any color you want!.when water starts to boil add colour and rava/soji that we fried earlier.keep stirring without any lumps formation.now when it is bit thick add sugar and keep stirring for few minutes.Then add cardamom powder and mix.Keep this aside now.Take a separate pan to fry cashews.I have taken broken cashews if you want add it as whole!..fry it until golden brown in ghee. and top this to the kesari and serve it hot!

pro tip:Add generous amount of ghee!ghee will boost up the taste to next level!

Water – 1 and 1/2 cups
Kesari food color – a pinch
Saffron – 2 to 3 strands
Milk – 1 tbsp
Cashewnuts – 1 tbsp chopped
Raisin – 1 tsp

Method: Soak saffron strands in warm milk, set aside. Heat a little ghee, fry cashew nuts and raisins separately and keep it aside. Add the remaining ghee, rava and fry for a few minutes.

Boil 1 and 1/2 cups of water (rava 1 cup : water ratio 3 cup), add a pinch of kesari powder to it. Then add the boiling water to the rava, simmer . Keep covered for a minute until the rava gets cooked. Once the rava is cooked add the sugar mix well and cook on low flame until the kesari starts to leave the sides of the pan. Add remaining ghee, saffron milk,cardamom powder, cashew nuts, raisins and serve hot or warm. Ghee is the main ingredient in this recipe which makes it tasty. If you want more sweetness adjust sugar ratio 1: 2..
