the difference are as follows:

★ digestion: when food enters body there is secretion of certain enzymes such as 
lipase, pepsin, salivary amylase, trypsin, et cetera. these secretions break down complex food molecules into smaller ones. 

proteins=> amino acid
carbohydrates=> sugars such as fructose, lactose and glucose.
fats=> fatty acids

they are easily absorbed by body. Maximum absorption of food takes place in small intestine and absorption of water takes place in large intestine.

★ assimilation: these smaller food molecules when absorbed help in development of body. In simple words the absorbed food material is utilized by cells to produce energy in order to grow and function properly.

★ ingestion: it is nothing but taking in food material through mouth.
while excretion is the process of elimination of waste.

Digestion is the process in which food containg large, insoluble molecules is broken down into small, water soluble molecules.

Ingestion is the process of taking food into the body.

Assimilation is the process in which the absorbed food is taken in by body cells and used for energy, growth and repair.
