Drying is the removal of water from a substance. For example- keeping sand in the hot sun will dry out the sand. Evaporation is the change of liquid state to gaseous state. For example- on boiling water, the water gets evapourated and turns into vapour.

As the same of the first drying example the separation is due to water vapor pressure gradient between milk drops surface and the air, and the evaporation latent heat is supplied by the same air producing a temperature failing between inlet and outlet.
