1. a) The field cannot be seen by the user.
b) The field can be seen by the user.
2. a) The field cannot be edited by the user usually.
b) The field can be edited by the user usually.
3. a) Row number or column letter is also hidden in this case.

Hiding will only conceal the column/Row which you want to hide.
e.g. if you want to hide column 'B', it'll disappear from column field and column 'C' will appear after column 'A'.
Please note that hiding doesn't mean deleting.
you can anytime un-hide the hidedn columns
Freezing is functionality of Excel where some columns/rows can be frozen so that they will remain fixed and will not be scrolled up/down/left/right.
