Caramelization may sometimes causebrowning in the same foods in which the Maillard reaction occurs, but the two processes are distinct. They are both promoted by heating, but theMaillard reaction involves amino acids, as discussed above, whereascaramelization is simply the pyrolysis of certain sugars.
