Difference between Swiss cheese and Roquefort cheese:

Before the discovery of penicillin, Roquefort cheese was applied on open wounds by shepherds to prevent infection gangrene. This is one kind of blue cheese.  It is used for salad dressing, salad topping, or on a hamburger.

On the other hand, Swiss cheese is famous for having holes. This holes are created by bacteria and this bacteria changes the  milk to Swiss cheese. It has nutty and bittersweet taste. Sometimes Swiss cheese is used on french onion soup.
