Different animals have different types of waste because the medium in which they live decides what to excrete. Didn't get it?? Let me elaborate..
Fish are ammonotelic i.e; they secrete ammonia because Ammonia requires lot of water to get excreted. Plus ammonia is toxic. Since fish live in aqueous medium, it's not a big deal to retain water they used in excreting ammonia.
Humans are ureotelic i.e; they excrete urea because urea is less toxic when compared to ammonia and it requires less water than ammonia. We can't guarantee that wherever we go, we can find water to replace the water used in excretion.
Scorpions are uricotelic i.e; they excrete uric acid because uric acid the least toxic when compared to ammonia and urea and it doesn't need water at all to excrete. Since deserts have very little water, it is best to secrete uric acid in the form of pellets than secreting ammonia or urea
