During the process of fermentation, one molecule of glucose is converted into two molecules of pyruvate, also referred to as pyruvic acid.

In this process, energy is generated in the form of two molecules of high energy phosphates, that is adenosine tri-phosphates or ATP.

From every glucose molecule, four molecules of ATP are produced, however, two molecules of glucose are consumed during the preparation phase.
