Yogurt is made by fermenting the milk. This is done by adding Lactobacillus bulgaricus as well as another microbe named Streptococcus thermophiles.

A little quanity of yogurt can be added to the milk to act as starter, which contains lots of Lactobacillus in high numbers.

These bacteria at favorable temperature gets multiplied and thus turns the milk into yogurt.
