During the Starch test, why do we dip the leaf in water before adding the iodine solution?

It is very important to dip the leaves in boiling water before adding the iodine solution while conducting the starch test.

This helps to get rid of the waxy cuticle that blocks the entry of iodine, damages cell membranes to form starch granules in cytoplasm and chloroplasts.

It also alters the natural quality of those enzyme that convert starch to glucose.
