Evolution is a long never ending process. You can also consider it as the survival of the fittest or natural selection. When life first formed, there was no eye, slowly but steadily life evolved, organisms moved out of water on the surface. Now there were some who had cells that could slightly detect the presence of light. These were better fitted on the surface and survived better than other. Now out of these some generated better photoreceptors and that increased their chances to survive. This continuous process kept on going and hence the organisms with eye evolved.

The process is still going and we are still evolving.
