Food products containing oil and fats  are packed with a layer of nitrogen above them because-
1) to prevent the presence of Oxygen.First oxygen is removed from the pkt. and then is filled with nitrogen as the presence of oxygen would react with the oils and fats and  produce moisture which would spoil the quality of the product

Because for example chips packet contains half packet chips and half packet nitrogen so it does not spoil.
