The presence of betanin in beetroots is the reason it turns water red. Betanin is a glycosidic food dye obtained from red beet roots.
Betanin is also used a coloring agent in food and is PH sensitive. When added it water, it hydrolyses into sugar and betanidin.
On the other hand, there is no coloring agent present in carrots or radishes which is why they do not produce any color in water.
