Explain briefly why water changes it colour when cut pices of beat root is boiled in it but remain colourless in carrot

Beet root has a pigment called Anthocynin which is soluble in water and therefore changes its colour when boiled in it ,but carrot has a pigment called Carotine which is insoluble in water and therefore it does not changes its colour when boiled in it.

when piece of beetroot are boiled in water then it turns red due to presence of water soluble pigment anthocyanins in beetroot carrot have fat soluble pigment carotene which does not dissolve in water and their food water remain colourless
