Thermal decomposition of fats & oil. ...  Basically oil and fats are mixture of triglycerides.  When 3 fatty acids are combined with one glycerol molecule ,then it will called triglyceride.  Saturated fatty acids have all predominantly single bonds whereas unsaturated fatty acids have double bond.
