After proper maturity, fruits ripen in nature by using many physical and biochemical events. This process is irreversible and leads towards what is called senescence. The fruits become soft, change in colour, and develop characteristic aroma and flavour, with an increase in sugar level and reduction in acid content.

THIS IS IS THE REASON THAT ITS  irreversible.

Answer:

  • An irreversible change is when something cannot be changed back to its original form.
  • Ripening of a fruit is irreversible change because once a fruit is ripened  you can not get the unripened fruit back ..
  • ie. you can't convert a ripened fruit to an unripened one.

hope it helps you : )
