it's not necessary the food when cooked became softer like chapati
the food some times became softer like in cakes because of baking soda.

When uncooked food is touched ,it senses hard because of the presence of chemical bonds in protein,fat,carbohydrate content and other fibrous substance.When it is cooked these bonds breaks resulting in softness.
