The large globules of fats are broken down by bile salts into smaller globules.This process is called emulsification. The pancreas secretes pancreatic juice which contains lipase for breaking down emulsified fats. Lipase converts these fats into fatty acids and glycerol. Fat digestion takes place in small intestine. This digested fat is absorbed into the body through the villi by diffusion.
