When oils and fats are oxidised they becomes rancid....means their smell and taste will change.....
To prevent this ....
1 .. Use antioxidants...
2.. Keep the food in the tight container to slow down the oxidation..
3... Fill the nitrogen gas ....

These food gets rancid when oxidise.....having foul smell and bad taste and unhealthy for body.
To protect this we should......
.... refrigerate ( at low temperature)
.....snacks wrapped inside packets filled with N2 gas
......use preservation techniques
....... tight packing to prevent contamination of microbes
For ex. bread from rhizomes(fungi)
