explain why do spinach look green ,papaya yellow and edible parts of water melon red?

Spinach are leaves and leaves contain chlorophyll pigment which is green in colour which is the reason it appears green .

Papaya looks yellow in colour maybe due to the xanthophyll pigment present in the chromoplast in cells of the plant.

Watermelon looks reddish from inside due to the pigment lycopene present in the chromoplast which gives the colour to the inner pulp of the fruit.
