The colour of copper sulphate solution changes because when we heat it then the 5 molecules of water of crystallisation gets vaporised and we are left with solid copper sulphate. I. E.

Cuso4. 5h20 - - - - - - - > Cuso4 + 5h20

Its colour can be regained by pouring some water on it. I. E.

Cuso4 (anhydrous) + 5h20 - - - - - - > Cuso4. 5h20

Thanks for asking
Hope it will help
