a) If baking soda is used in making called them sodium carbonate formed from it by the action of heat will give a bitter taste to cake.
b) baking soda can be converted into baking powder by adding a mild edible acid called tartaric acid.
c) When baking powder is used in batters, the tartaric acid reacts with baking soda and neutralises the bitter taste without affecting its ability to produce CO2 and H2O.
