when milk will convert into curd it'll become more acidic because of the presence of lactobacillus in the curd I which produces acidity in mil and make curd so basically curd is more acidic and the pH will be near 4.5 to 5.5

Answer:
- Fresh milk with a pH of 6 is neutral in nature. When it changes into curd, its pH decreases to about 4-4.5 and becomes acidic in nature.
- This is because of the formation of lactic acid during the fermentation process of curd.
- When milk is heated and little curd is added and left to set, the lactose present in milk is acted upon by the lacto bacillus bacteria and converts it to lactic acid.
- The lactic acid acts and denatures the milk protein and fat globules to form the thick curd and also gives it an acidic and tart taste.
