Bile provide alkaline medium to food and contain bile salts which help in digestion and absorption of fats. It has sodium bicarbonate, sodium taurocholate and sodium glycolate which reduce the surface tension of large fats droplets and break them into many small droplets, so that lipase can work on them. This process is called emulsification.
