Fungal infection does not occur in jams and pickles. Why?​

◼Pickles generally have high salt concentration that reduces the water content required for fungal growth and the vinegar in it makes the the pH to acid to support bacterial growth.

◼Jams generally have a high sugar content which reduces the water content.

◼That's why, they are not affected by fungus.
