steel is a poor conducted of heat so copper is added in the bottom

Stainless steel doesn’t conduct heat very well. A plain SS pot will have a hot spot where the heat source is and not much heat anywhere else. A layer of copper on the bottom helps spread the heat and has a look which some like. I personally prefer pots with a thick aluminum wafer on the bottom they work better and cost less.
