it's cuz we don't have that particular type of digestive system which can digest tough cellulose! Actually those animal which can digest tough cellulose have a bacteria in their digestive system, this bacteria digests the cellulose! we humans don't have that bacteria in our digestive system, so we can't digest cellulose fibre
