Because plants like peas and beans are leguminous plant that means they have root nodules which contains a special type of bacterium Rhirobium which absorbs Nitrogen from the air and convert it into soluble nitrates which will be vary much beneficial for the plant.

As they absorb Nitrogen from the soil and can convert it into soluble nitrates they are planted in Nitrogen deficient soil which in case increase the soil fertility by adding nitrogen to it
